Professional
Kitchen Knife
N678 Stainless Steel, 9 1/2" usable edge, 13"
overall length. 4mm spine thickness at the handle.
Handle in stabilized and lacquered Arca wood with hand
made bronze and stainless steel pins. Hand stitched cow
leather sheath.
It has a very ergonomic handle and the edge continues
under the handle about 1", so the cook can apply
extra pressure to chop or cut a bone. |

Purpose Small Kitchen Knife
4 1/4" blade in hand rubbed N678 (stainless steel
similar to AUS8) 4mm thickness and 43mm wide. 8 1/4"
Overall lenght.
Nickel Silver guard. Texturized delrin handle for extra
grip and easy cleansing.
Very ergonomic knife to remove bones and skin, but most
of all, to slice and chop vegetables, as pictured. |

American
Style Bowie (C024)
7" blade in 5160, satin handrubbed with spine and
upper bever mirror polished. Full flat tang. Overall Length:
12" Handle in polished red deer stag slabs mimicking
ivory with filed guard in nickel silver and ebony. The
fittings on the lanyard are sterling silver.
A frontier style sheath in two tone hand stitched leather
with a holding system in leather strains with sterling
silver fittings and an ivory (sperm whale) lock piece. |
